When it comes to dinner I love a meal that’s easy to prep pare and doesn’t take too long to cook. Enter the foil packet meal – these bundles of deliciousness are a breeze to make, so easy in fact your kids can help too. Just load them up with your ingredients, grill, and you’ve got dinner! This Smoked Sausage and Potatoes foil packet is my family’s favorite. It even rivals Swedish Meatballs with the kids and that’s saying something!

I’ve made a sausage and potato recipe using a sheet pan and then baking everything together. While it was tasty, during the summer months I avoid my oven at all costs. That’s why I love these foil packet meals so much! I can throw them on the grill along with hot dogs for the kids. They’re perfect for cookouts with friends and tailgating as well.

I went with smoked sausage, but Italian sausage or chicken sausage would work great for this recipe too. I’ve even been known to jazz things up with some chopped red bell peppers, onion and potato, and Italian seasoning from time to time. And if you ever find yourself without the option to grill, you can oven roast these sausage and potato packs instead. Instead of grilling over medium heat, bake at 400 degrees F. The roasted sausage and potatoes pack version is just as good as grilled, trust me.

how to fold foil packets for grill

The first time I made these packets I was a bit wary of things leaking out, the foil ripping, or the food inside sticking to the foil. Fear not!

  • The trick is to start with heavy duty aluminum foil. It won’t rip and you’ll be confident flipping these packets over.
  • Then add a tablespoon of butter, or olive oil your call, inside to prevent sticking and some salt and pepper to flavor your food.
  • DO NOT add your cheese before cooking! It will stick and burn and it’s not pretty. I’m speaking from trial and error kids.
  • Fold your foil packets up using the steps above and you’ll have no trouble with leaks. Double fold the ends for security.

This grilled sausage and potato is perfect for any summer occasion or cookout. I like to pre-make out foil packets and take them along when we go tailgating. I cut a capital I shape in the foil and peel back both sides. We eat write out of the foil pack (on a paper plate) and toss everything in the trash when we’re done. So easy!

Can you make foil packets ahead of time?

You sure can! Prep your ingredients, place them on the foil, and then wrap everything up. Then refrigerate until ready to grill. They travel well in a cooler too if you’re taking them along with you.

Can you cook foil packets on the stove?

You can use your stove, but not the stove top. If I’m in a position where I can’t grill my foil packets, I pop them on a baking sheet and bake at 400 degrees F with a cooking time of about 30 minutes.

Can I freeze foil packets?

Yep! You sure can. Wrap your packets and then Place 2 packets in a gallon-sized freezer bag. Seal, and remove as much air as possible. Place in freezer until ready to cook. Thaw in the fridge for at least 8 hours before cooking.

This real trick to this sausage and potato recipe is making sure everything inside is about the same size. The sausage is cut into 1-inch pieces, the potatoes are quartered so they’re small enough to cook quickly, and the corn is cut into thirds. It also makes everything easy to eat right after cooking since it’s already bite-sized.

I like melty cheese on just about anything so after we open the packets I sprinkle some on. Then add a little parsley for color and you’re in business! I’ve also been known to turn our foil packets out onto a serving platter if we have a group of people over and letting everyone serve themselves vs. individual packets. Either way, this combination of sausage and potatoes is sure to satisfy!

  • Preheat grill to medium-high heat. 
  • Cut two square pieces of heavy-duty aluminum foil. (Regular foil will rip, buy the good stuff.) 
  • Cut the sausage and potatoes into 1-inch pieces. Divide evenly between foil, placing ingredients in the center on the foil. Cut each ear of corn into 3 pieces, and 1 ear to each foil square. 
  • Top the sausage and veggies with 1 tablespoon butter, and a sprinkle of salt and pepper.
  • Close the foil by folding one side over the ingredients and then the opposite side back over the top. You should have a rectangle with open ends. Fold the end up twice to close the packet. Repeat with other foil square. (see pics in post)
  • Place packets seam side up on the grill. Cook for 10 to 12 minutes. Flip packets and cook for another 10-12 minutes. Remove from grill to serving plates.
  • Cut a capital I shape into the foil. Carefully pull back the foil on each side, watch for the hot steam! Top with cheese and let it melt. Serve warm. 

Notes

I find that there is enough food to get 4 servings from 2 packets.

  3. Prepped these and took them camping. Grilled them up over the fire with a hanging grate. They were delicious! Everyone was happy.

    1. How long ahead of time did you prep them? Earlier same day? Or day prior? Etc. Wanting to do this as well for camping
