Ingredients You’ll Need to a Make S’mores Skillet Cookie
PANTRY ITEMS: To make this skillet cookie you will need all-purpose flour, graham cracker crumbs, baking soda, cornstarch, and both light brown sugar and granulated sugar.
REFRIGERATED ITEMS: Set out unsalted butter to soften, along with a few eggs to come to room temperature.
SEASONING/EXTRACTS: You’ll also need a little salt and vanilla extract to make this cookie.
CANDY: You can’t have an amazing skillet cookie without plenty of chocolate bars and mini marshmallows!
TOPPINGS: Grab enough chocolate bars, mini marshmallows, and graham crackers to also use for the topping ( and to snack on- but that’s just a good suggestion).

How to Make a Skillet Cookie
Jump to RecipeSTEP 1 Preheat the oven to 350 degrees F. Using a large bowl with beaters or a stand mixer, cream the butter, brown sugar, and granulated sugar together until creamy. Beat the eggs in, one at a time, and then add the vanilla extract.

STEP 2 In a medium bowl whisk together the flour, graham cracker crumbs, salt, baking soda, and cornstarch. On low-speed add the flour mixture and then stir in the chocolate chunks.

STEP 3 Press half of the cookie dough evenly across the bottom of a cast iron skillet, or other oven-safe non-stick skillet. Sprinkle the mini marshmallows over the dough and then top the marshmallows with scoops of the remaining dough. Smooth the top into a large cookie.

STEP 4 Bake the skillet cookie for 25-30 minutes, or until the edges are golden brown.

STEP 5 Once out of the oven, top the cookie with graham cracker pieces, more marshmallows, and chocolate bar chunks.

STEP 6 Set the oven to broil and slide the skillet back in the oven to toast the marshmallows, about 1-3 minutes. Once toasty brown, remove the skillet from the oven and allow the cookie to cool for about 10 minutes before enjoying.

Tips & Tricks
- Store leftover skillet cookie on the counter, covered with foil, for about 3 days. If you don’t think you’ll get to the entire cookie in one sitting, take pieces from the skillet before adding your ice cream. That way it won’t melt all over the cookie and make the leftovers mushy.
- Marshmallows will melt in high heat so be sure to cover the marshmallows in the center of the cookie with the top layer of cookie dough. This will prevent the marshmallows from dissolving.
- Cast iron skillets are great at retaining heat so your cookie will continue to cook even after you remove it from the oven. Once you see the edges have browned and the center looks soft and maybe gooey, the cookie is done. If you wait until the center is fully cooked the cookie will end up overdone.
- Make individual skillet cookies with mini cast iron skillets! Press the dough 1-inch thick over the bottom of the skillets and cook for about 10-13 minutes, although cooking time can vary depending on your skillet.

How do you know when a skillet cookie is done?
I think the best skillet cookies are a bit under-baked in the center, but some people prefer their cookies cooked through. If the center squishes a bit but doesn’t feel super gooey when pressed with your finger it’s perfect (for me anyway). Remember that the skillet will continue to cook the cookie a little as it sits in the skillet so if you wait until your cookie is fully baked it may become overbaked. This is your delicious skillet cookie though so definitely bake it how you like it!

S’mores Skillet Cookie
Ingredients
Cookie
- 1 cup unsalted butter softened
- ¾ cup light brown sugar packed
- ½ cup granulated sugar
- 2 large eggs at room temperature
- 2 teaspoons vanilla extract
- 2 ¼ cups all-purpose flour
- ½ cup graham cracker crumbs (3 1/2 full crackers)
- 2 teaspoons cornstarch
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup chocolate chips
- ⅔ cup mini marshmallows
Toppings
- 4 graham crackers broken into pieces
- 1 cup mini marshmallows
- 2 Hershey's milk chocolate bars broken into pieces
- Vanilla ice cream for serving (optional)
Instructions
- Preheat your oven to 350 degrees F. Position one oven rack in the center of the oven and another rack in the top 1/3 of the oven.
- In a large mixing bowl, beat the butter, brown sugar, and granulated sugar on high speed until smooth and creamy, about 2 minutes.
- Add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract.
- In a medium mixing bowl, stir the flour, graham cracker crumbs, salt, baking soda, and cornstarch together. With your mixer on low speed, add the flour in two additions until it's just combined.
- Stir in the chocolate chips by hand.
- Press half of the cookie dough into the bottom of a 12-inch cast iron skillet. Sprinkle 2/3 cup of miniature marshmallows over the cookie dough. Then add the cookie dough in scoops to the pan and press over the marshmallows into a large solid cookie.
- Bake for 25-30 minutes, or until the edge of the cookie is golden brown.
- Carefully remove the pan from the oven and top the cookie with the graham cracker pieces, 1 cup of miniature marshmallows, and the Hershey's bar pieces.
- Place the skillet back into the oven on the rack in the top 1/3 of the oven. Turn the oven's broiler to high and cook until the marshmallows are toasted golden brown, about 1-3 minutes. Watch closely so that the marshmallows do not burn! (Unless that's how you like them, then you do you.)
- Carefully remove the cookie from the oven and cool for 10 minutes on a wire rack before serving. If desired, add scoops of vanilla ice cream in the center of the cookie.
