Let’s talk about the elephant in the room. These are not technically scalloped potatoes. The addition of cheese turned them into au gratin potatoes (that’s the big difference between the two).
However, I have seen numerous recipes for scalloped potatoes with cheese. They both start with a white sauce (béchamel) and potatoes. So, I’m doing whatever I want.
Cheese? Sure!
Leeks? Yum!
Ham? OMG yes!!

Ingredients for Cheesy Scalloped Potatoes and Ham
- Potatoes
- Butter
- All-purpose flour
- Half-and-half
- Salt & pepper
- Paprika
- Onion powder
- Smithfield® Anytime Favorites® Cubed Ham
- Shredded cheddar cheese
- Fresh chives or green onions
What are the best potatoes to use to make scalloped potatoes?
Russet potatoes have a high starch content and do a great job of keeping keep the sauce thickened while your scalloped potatoes cook.
You can peel your potatoes if you’d like, but they’re just as good with the skin-on too.
How do you thicken scalloped potatoes?
You want a relatively tight béchamel to start with. The sauce will thin as it cooks, but the starch from the potatoes will help keep it from being runny.
Once baked, you get what you get, so take steps to prepare your ingredients correctly. If you do, you’ll have the best ham and scalloped potatoes casserole around!
How to Make Scalloped Potatoes and Ham

Preheat your oven to 350 degrees F. Coat a 9-inch x 13-inch baking dish with non-stick cooking spray. Set aside.

In a medium saucepan melt butter over medium heat. Then whisk in flour and cook for 1 minute. Slowly whisk in the half-and-half to prevents lumps from forming. Simmer until sauce begins to thicken.

Remove from heat and whisk in salt, pepper, paprika, and onion powder. Add 1 cup of cheddar cheese and whisk until melted. Adjust seasoning to taste. Keep warm.

Cut potatoes in half lengthwise. Remove ends, and cut potatoes into slices 1/8 to 1/4-inch thick. Layer half of the potatoes in the bottom of your prepared baking dish. You can lay them against each other like shingles on a roof for presentation points.

Top the potatoes with half of the cheese sauce. Be sure to spread it all over the potatoes. Sprinkle half of the cubed ham over the cheese sauce. You want to make sure there’s some ham in each serving.

Repeat the layers of potatoes, cheese sauce, and ham. Then cover with foil.

Bake for 40 minutes covered. Carefully remove the foil and sprinkle the remaining cup of cheese over the potatoes. Bake for another 20 minutes.

Remove from oven and let rest at least 10 minutes before serving. Garnish with fresh chives if desired.
To save prep time, I slice the potatoes while the cheese sauce is cooking. The sauce doesn’t take long to come together, but if you can multitask, go for it!
If you want super even potato slices, or don’t want to cut your potatoes by hand, a mandolin slicer is a great option. Just be careful and use the finger guard or get yourself a pair of cut resistant gloves.
What goes good with scalloped potatoes and ham?
Everything!!!
I particularly like this recipe with homemade dinner rolls and a perfectly cooked steak, or for our holiday brunches instead of hashbrowns. My boys even like to eat these scalloped potatoes as dinner. All that yummy Smithfield Anytime Favorites Ham makes this recipe a meal in itself!

Cheesy Scalloped Potatoes and Ham
Ingredients
