Huevos Rancheros Ingredients
TORTILLAS: To make this breakfast you will need corn tortillas so pick up your favorite brand or grab some from your local taqueria.
EGGS: Whether you like your eggs cooked sunny side up, over medium, or scrambled, you will need 1-2 eggs per person for this recipe.
BEANS: This recipe tastes delicious with black beans as well as refried beans, so try it each way, or just stick with the bean you like most. When using black beans be sure to drain and rinse them before warming.
GARNISH: Top your eggs with Queso Fresco, salsa, chopped cilantro, and avocado. There is also huevos rancheros sauce made from tomatoes, jalapenos, garlic, and spices… but salsa is a super easy substitute and is what I usually use.
How to Make Huevos Rancheros
Jump to RecipeSTEP 1 Warm the beans of your choice on the stovetop or microwave. While the beans are cooking, char the corn tortillas in a dry, non-stick, or cast iron pan over medium-high heat.
STEP 2 Add one teaspoon of vegetable oil to a nonstick skillet and cook the eggs to your liking.
STEP 3 Stack two tortillas on a plate and top them with beans, followed by an egg, and finally, queso fresco, salsa, and any other garnishes you like.

Huevos Rancheros
Equipment
Ingredients
- 8 corn tortillas
- 1 tablespoon vegetable oil
- 4 large eggs
- 15 ounces canned black beans drained and rinsed
- ¼ cup queso fresco crumbled
- ¼ cup salsa
- 1 avocado pitted and chopped
- Fresh cilantro chopped (optional)
Instructions
- Char the tortillas in a dry skillet or cast iron pan over medium-high heat. Set aside on a plate.
- Place a non-stick skillet over medium heat and add the oil. Once the oil is hot, fry the eggs to your desired doneness. (I like mine over medium.) Use a rubber spatula to keep the eggs separated in a pan or cook them one at a time. (see note)
- While the eggs cook, warm the black beans in the microwave according to the package directions.
- Place two tortillas in a stack on a plate. Add 1/4 of the beans and one fried egg. Top with 1 tablespoon or queso fresco, 1 tablespoon of salsa, 1/4 avocado, and chopped cilantro if desired. Serve immediately.
Notes
- You can use 2 eggs per person if desired. You can also make scrambled eggs instead of fried.
- Refried beans can be substituted for black beans if preferred. You’ll need about 1/2 cup total. Warm the beans according to the package directions.
