Where do I being with this vegetable salad recipe? It’s my mom’s favorite! She would make it all the time in the summer months when I was growing up. She found the recipe years ago, tweaked it a little to her taste, and ever since it’s been making an appearance at our dinner table.

This bright, light salad is the perfect complement to rich grilled meats and BBQ dishes, but it’s just as good alongside your favorite chicken dinner too! I may have even caught my mom eating it straight from the fridge with a spoon now and again.

Now I’m sure there are people saying, “Julie! Tomatoes are not a vegetable!” Yes, I know. We’re all going to be okay though. This salad is about bringing a gorgeous blend of produce together in a light and creamy dressing with a kick.

It’s pretty, delicious, and after the first bite, you won’t care about the whole fruit/vegetable salad ingredients debate. Trust me. 🙂

Depending on the season, fresh corn can be a little hard to find. If you’re in a pinch you can get away with using canned corn. That being said fresh tastes about a million times better in the recipe, but I’ve made it both ways.

You can also skip the jalapeno if you prefer. I like the kick it adds to the dressing (and so does my momma) but I get that not everyone is into spice.

This salad can keep for a couple of days in the fridge, but I recommend serving it within 3 hours of preparing if not immediately. The veggies are crisp and the dressing hasn’t pulled out too much of the water in the veggies.

The next day the salad is still good, just not as good. Ya know? In any case, this recipe is sure to be a hit everywhere you take it!

Ingredients
  

Dressing

Salad

  • 4 ears yellow corn cleaned, cooked, cooled, and cut off the cob
  • 2 large tomatoes seeded and chopped
  • 6 stalks celery chopped
  • 1 cucumber chopped
  • ½ red onion finely chopped

Instructions
 

  • In a medium bowl, whisk together sour cream, mayonnaise, vinegar, jalapeno, celery seed, salt, and pepper until smooth. Set aside to let the flavors marry while you prepare the veggies, at least 5 minutes.
  • In a large bowl, mix all the chopped vegetables together.
  • Pour dressing over vegetables and gently mix together until well combined.
  • Serve Immediately or cover and store in the fridge for up to 3 hours.

Notes

You can leave out the jalapeno if you don't like your foods spicy. I like the extra kick it gives this dish.
If you're in a pinch, you can get away with two 15 ounce cans of corn that have been rinsed and drained, but fresh tastes better.

  2. I bet avocado would be a great addition to this already fantastic looking recipe. I have already updated my grocery list for this week to include the ingredients I don’t already have in the house.
    I bet this would be great with some salmon or greek chicken. Have you ever tried it with fresh dill? I’m wondering if it would be good omitting the jalapenos and adding some fresh dill instead. Any thoughts?

    1. Hi Laura! I completely avocado would be fabulous in this salad. You could totally take out the jalapeno and add dill. The fresh burst of flavor would work well. I’d start with a small amount, taste, and add more dill as desired so it doesn’t overpower the salad.

    This looks like one of those side dishes that I could pretty much inhale a bowl full of without even realizing it. I’m not sure why, but fresh veggies when they’re chopped up small like that taste SO much better to me than big chunks. #weirdo

    Loved, loved, loved this salad!!!! So easy to make!! I didn’t mix the veggies with the dressing. I kept them in the fridge seperate (I put a paper towel in with the veggies to soak up any moisture) and then I mixed a little bit with the dressing each day to take for lunch. Can’t wait to make it again soon and this time I’m going to add chopped olives. Yum!!!

    How did you calculate your carbs? Corn is high in carbs so I would think that number would be higher?

    1. Hi Tina! I have a nutrition calculator that is built in the recipe card program I use on the site and the program does its best to accurately match ingredients and quantities. I cannot say it’s 100% accurate and I’m not a licensed nutritionist so I’m unable to calculate everything myself. That being said, you can always double check the nutrition using an online calculator.
      Based on your comment I did some Googling and manually updated the corn nutrition. Hopefully, it’s more in line with what you were expecting now. Thank you for bringing this to my attention!

    This recipe is light & delightful …… quite like I had anticipated it to be. Prior to this I had neither white wine vinegar nor celery seed in my cabinet. Now I do and this makes officially (4) types of vinegar for me. The recipe may have been better suited for summer but I believe it did just fine here in February!

    This was so good! It was so light and fresh, reminds me of summer! This is the perfect side dish all summer long. I took the advice of one reader and didn’t mix the dressing with the veggies, I mix it in as we use it to make it last longer. Will definitely be in my rotation of veggie side dishes.     1. Yes, you could swap in zucchini. Jicama might be a nice option too for some crunch. 🙂

    The salad was just okay. I love the color, the combination of vegetables and the crunch texture. The sauce was missing some flavor though. It needed more seasoning and/or vinegar. I added extra salt and it improved the flavor some.
