We love going out to lunch, whether I’m taking the boys to meet Mike, or it’s a lazy afternoon and going out just sounds fun, it’s my fave.  Teakwoods is our default we-could-practically-live-there place to go.  (Go to the Gilbert store it’s the best!)  I mean seriously, Mike’s been going there for 12+ years and I’ve been going for almost 9 years.  There are daily specials and the menu is always good, even when they change it and I get sad the T-Mels aren’t on there anymore.

Last time they changed things up this Crispy Chicken Salad appeared and I was on it like white on rice!  A bed of lettuce tossed in honey mustard dressing with Granny Smith apples, fried, chicken, and blue cheese?!?!?!!!  Come to mama!  I order this salad all the time and now I’m making it at home.  I did substitute diced chicken breast for the fried chicken to make things a little healthier.  That and I didn’t feel like frying chicken just for this salad.  I hope you love this salad as much as I do!

Ingredients

  • Heat a large skillet over medium to medium-high heat.
  • Butterfly the chicken breast, but instead of stopping, cut all the way through to create two thin cut chicken breasts.
  • Cook the chicken breasts in the skillet for 3 to 4 minutes per side, or until chicken is no longer pink in the center. Remove from the skillet to a cutting board. Once the chicken is cool enough to handle, dice the chicken into bite-sized pieces or cut into thin slices.
  • Rinse the lettuce and remove as much water as possible from the leaves. Place lettuce in a large serving bowl.
  • Add half the feta cheese and salad dressing. Toss to combine. Add more dressing as desired.
  • Add the apples, chicken, and sprinkle with remaining feta cheese. Serve immediately.

Notes

Blue cheese is also great in this salad if you don't care for feta, and if you want a little crunch, add some Garlic Parmesan Croutons.
