Ingredients You’ll Need to Make Mini Antipasto Skewers
MEAT: Pick up your favorite dry Italian salami. You could also use pepperoni or prosciutto to change things up or have a large variety of skewer options.
CHEESE: We’re keeping it simple with mozzarella. I like using the like ciliegine balls, but fresh mozzarella (in a log) will work too. Just cut it into bite-size chunks.
PANTRY: To really make these skewers pop, grab some mini pepperoncini (full-size peppers are fine too, just cut them down to size), sweet cherry pepper, and olives. You can use your favorite type of olives – I went with Kalamata and Manzanilla this time.
How to Make an Antipasto Skewers Wreath
Jump to RecipeSTEP 1 Fold the salami rounds in half, and then into thirds to make a little salami rectangle. Dry the mozzarella balls and prep the peppers.
STEP 2 Skewer 4 to 5 on the ingredients on each wooden skewer. Mix up the combinations to give your guests some variety.
STEP 3 Arrange some of the skewers in a wreath shape on a platter. Then take the remaining skewers and stack them on the base ring until they’ve all been arranged. Stick sprigs of fresh rosemary around the wreath in between the skewers for garnish. Cover the plate with plastic wrap and chill until you’re ready to serve.
Tips & Tricks
- You can dress up your appetizer even more by making antipasto skewers with tortellini. Cooked the tortellini according to the package directions and drain. Then toss the pasta in either olive oil or pesto and pop them on the skewers along with the other ingredients.
- Try adding artichoke hearts, prosciutto, cubed cheese, or fresh basil leaves as alternative options for the skewers.
- The skewers can be made up to 24 hours in advance and stored in the refrigerator in an airtight container with a paper towel lining the bottom of the container. I recommend assembling the skewers the same day you plan to serve them to avoid excess moisture from the mozzarella pooling on the board.
- This appetizer can easily be made vegetarian or vegan just by changing out the ingredients. Skip the meats and add artichokes or portabello mushroom pieces. Swap out for vegan cheese or skip it completely.

Anitpasto Skewers Wreath
Equipment
Ingredients
- 8 ounces ciliegine mozzarella balls (1 tub)
- 6 ounces salami sliced
- 1 pint cherry tomatoes
- 5 ounces Kalamata and/or manzanilla olives pitted
- 8 ounces sweet cherry peppers cut in half
- 8 ounces mini pepperoncini (see note)
- Fresh rosemary sprigs for garnish
Instructions
- Remove the mozzarella balls from the tub. Place them on paper towels to remove as much excess liquid as possible while you prep the other ingredients.
- Fold the salami slices in half. Then fold them into thirds to create a rectangular shape.
- Add four to five ingredients to each skewer. Mix and match the ingredients so that there is some variety in the skewers. There are usually 22 to 26 mozzarella balls in a tub, so most skewers will have cheese but not all of them.
- Once the skewers are assembled, arrange some of them in a circle/wreath shape in a single layer on a serving platter. Add the remaining skewers stacked on top of the base ring. Add fresh rosemary sprig around the wreath to decorate. Serve immediately or cover and chill until ready to serve.

- If you can’t find mini pepperoncini, you can buy regular-sized ones and cut them in half.
