I love an easy & flavorful one-dish breakfast on the weekend, like this Kielbasa & Potato Scramble! It’s the perfect way to start your day!
Mike loves hash meals. Dinner, breakfast…if it’s a mix of all his favorite foods in one bowl he’s a happy camper. For those that aren’t familiar with hash, it’s a dish consisting of diced or chopped meat, potatoes, and spices that are mixed together and then cooked either alone or with other ingredients such as onions. I like hash because 9 times out of 10 I can cook everything in one pan and there’s hardly any clean up.

The other morning I was poking around the fridge and saw the kielbasa I had stashed away. I love kielbasa! There’s tons of flavor and it’s got that luscious fatty taste to it. Basically, it’s my second runner up to bacon. I grabbed the sausage, some potatoes I had on the counter and some onions & garlic. I got cooking and Mike started poking around the kitchen. He’s drawn to the smell. (Which kind of makes me feel like the most awesome wife ever that he’ll stop what he’s doing to see what I’m cooking.) Since I was making breakfast, I added some eggs to help bind everything together. I didn’t add very many because I wanted the meat & potatoes to be the star of the show, but you can totally add more eggs. It’ll help stretch this dish to feed more people too.

Kielbasa & Potato Scramble
Ingredients
- 1 kielbasa sausage sliced into 1/8-inch thick pieces
- ½ tablespoon unsalted butter
- 20 baby gold potatoes rinsed and cut into small, bite-sized pieces
- ½ yellow onion peeled and diced
- 1 ½ garlic cloves grated with a microplane or minced
- 1 red bell pepper seeded and diced
- 1 green bell pepper seeded and diced
- 6 eggs beaten
- Salt & pepper to taste
Instructions
- Heat a large skillet over medium-high heat. Add the sausage and cook for 5 to 8 minutes, turning once, or until crispy on both sides. Remove to a bowl and set aside.
- To the same skillet, add butter and heat until melted. Add the potatoes and cook until crispy and almost fork tender, about 10 mins.
- Reduce the heat to medium, and add the onions and garlic. Cook for 5 minutes. Stir often to prevent burning until the onions have softened.
- Add the bell peppers to the skillet and cook for another 10 minutes
- Add the sausage back to the skillet along with the eggs. Stir to combine.
- Cook for another 3-4 minutes, or until the eggs are cooked through. (The eggs may take on a slightly grey color from the sear on the sausage, that's okay.) Season with salt and pepper to taste. Serve immediately.
