Spray the inside of an 8-ounce glass bowl (or other clear microwave-safe container) with cooking spray.
Add the potatoes, bacon, cheese, and egg to the bowl. Mix well so everything is coated in the egg.
Place in the microwave and cook for 1 minute. Carefully remove the bowl and stir. Cook for another 30 seconds until the egg is cooked through. Caution: It will be very hot, allow to cool slightly before serving.
Notes
If you want 2 eggs, make sure to use a 16-ounce glass bowl instead and add an extra 30 seconds to 1 minute of cooking time.
For fast-cooked potatoes: Peel and dice 1/2 of a Yukon Gold potato. Place the pieces in a shallow microwave-safe dish and spread them out evenly. Cover with a lid (leaving a steam vent) and microwave for 1 minute. Repeat as needed until the potatoes are fork-tender.
For air fryer potatoes: Add frozen diced hash brown to your air fryer basket. Spray with avocado oil and cook for 7 minutes. Shake, spray again, and cook for another 7 minutes. The potatoes are ready to use right away or for meal prep.
For Meal Prep: You'll need 2 Yukon Gold potatoes and 8 slices of bacon for 4 servings. Pan-fry the diced potatoes ahead of time and cook off the bacon. Add the cooled potatoes, bacon, and shredded cheese to the glass bowls in the amounts listed above. Cover with a lid and refrigerate. When you're ready to cook, grab one of the bowls, stir in the egg, and cook as directed.
