Stem the strawberries and cut each berry into bite sized pieces. Place the berries in a large serving bowl.
Cut the mozzarella cheese into bite-sized pieces and add to the bowl with the strawberries.
Sprinkle the basil onto the cheese and use a large spoon to gently toss everything together.
Cover and keep cold until ready to serve, up to 30 minutes. Drizzle the salad with balsamic glaze or serve the glaze on the side along with some olive oil, if desired.
You can pre-cut the strawberries and cheese to save prep time, but DO NOT mix everything together until you are ready to serve. The juice from the strawberries will begin to break down the cheese.Make your own balsamic glaze: Add 16 ounces of balsamic vinegar, 1/2 cup sugar, and 1/8 teaspoon salt to a saucepan over medium heat. Bring to a boil, stir, and reduce by half until thickened (stirring occasionally). It takes about 20-30 minutes and will make 1 cup of glaze.
