Apple Chicken and Feta Salad is a homemade version of one of my favorite salads to order when we go out! The apples and chicken make this salad delicious and nutritious!
Heat a large skillet over medium to medium-high heat.
Butterfly the chicken breast, but instead of stopping, cut all the way through to create two thin cut chicken breasts.
Cook the chicken breasts in the skillet for 3 to 4 minutes per side, or until chicken is no longer pink in the center. Remove from the skillet to a cutting board. Once the chicken is cool enough to handle, dice the chicken into bite-sized pieces or cut into thin slices.
Rinse the lettuce and remove as much water as possible from the leaves. Place lettuce in a large serving bowl.
Add half the feta cheese and salad dressing. Toss to combine. Add more dressing as desired.
Add the apples, chicken, and sprinkle with remaining feta cheese. Serve immediately.
Notes
Blue cheese is also great in this salad if you don't care for feta, and if you want a little crunch, add some Garlic Parmesan Croutons.
