Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper or grease with non-stick cooking spray. Set aside.
In a large mixing bowl, beat together the butter, brown sugar, and sugar until fluffy, about 2 minutes. Add the egg and molasses to the bowl and mix until evenly combined.
In a medium mixing bowl, stir together the flour, baking soda, salt, cinnamon, ginger, and allspice. Pour this mixture into the wet ingredients and mix until just combined.
In a small bowl, stir together the sugar and cinnamon for the coating. Use a cookie scoop to portion the dough and roll it into 2-inch balls. Roll the dough balls in the cinnamon sugar mixture until coated and place them on the lined baking sheet 2 inches apart. (They will spread.)
Bake for 8-10 minutes or until cracks have formed and the edges are golden brown.
Remove from the oven and let cool on the pan for 3 minutes before transferring to a wire rack to cool completely.
Notes
If you don’t have salted butter on hand, add and extra1⁄4teaspoon of salt to the dry ingredients.
Need an allspice substitute? Combine 13⁄4teaspoons ground cinnamon with1⁄2teaspoon ground nutmeg, and a pinch of ground cloves. You’ll have more than you need for this recipe.
