In a medium bowl, whisk together the Bisquick and baking powder just until mixed, some lumps are okay.
In another medium bowl, beat the eggs and egg yolk together. Then add in the milk and maple syrup.
Add the egg mixture to the Bisquick and mix with a rubber spatula just until combined, then let the batter rest for 30 minutes.
While the batter is resting, cook the bacon in a large skillet (or on your griddle) until it's crispy. Transfer the bacon to a paper towel-lined plate to drain. Once it's cool enough to handle, finely chop the bacon and fold it into the pancake batter.
Pour 1/4 cup portions of batter onto a griddle preheated to 275 degrees F. Cook for 2 to 3 minutes until bubbles form on the top of the pancake, then flip and cook for 1 additional minute.
Serve warm with butter and maple syrup. I like to sprinkle a little extra chopped bacon on top too.
Notes
If you don't have an electric griddle, you can cook these pancakes in a skillet (preferably non-stick) over medium heat.
