Stir together flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves in a large mixing bowl. Stir until combined. (If gifting pour dry ingredients into a 1-quart mason jar.)
In another mixing bowl, whisk together milk, butter, molasses, eggs, and lemon juice until combined. It may look broken and streaky, that's okay.
Add wet ingredients to dry ingredients and mix until completely incorporated and there are no lumps. Let better rest for 5 minutes.
Heat waffle iron while waffle batter rests.
Once the waffle iron is hot, coat the irons with non-stick cooking spray. Pour 3/4 cup of batter onto the iron. Close and cook until the indicator light goes off, about 5 minutes. Once you open the iron your waffle should be crispy on top and fluffy in the middle.
Transfer waffle to a plate and spread butter on immediately. Repeat with remaining waffle batter.
Sprinkle waffles with powdered sugar and drizzle with maple syrup. Serve warm.
