Cut two square pieces of heavy-duty aluminum foil. (Regular foil will rip, buy the good stuff.)
Cut the sausage and potatoes into 1-inch pieces. Divide evenly between foil, placing ingredients in the center on the foil. Cut each ear of corn into 3 pieces, and 1 ear to each foil square.
Top the sausage and veggies with 1 tablespoon butter, and a sprinkle of salt and pepper.
Close the foil by folding one side over the ingredients and then the opposite side back over the top. You should have a rectangle with open ends. Fold the end up twice to close the packet. Repeat with other foil square. (see pics in post)
Place packets seam side up on the grill. Cook for 10 to 12 minutes. Flip packets and cook for another 10-12 minutes. Remove from grill to serving plates.
Cut a capital I shape into the foil. Carefully pull back the foil on each side, watch for the hot steam! Top with cheese and let it melt. Serve warm.
Notes
I find that there is enough food to get 4 servings from 2 packets.
