Heat a large skillet over medium-high heat. Add the sausage and cook for 5 to 8 minutes, turning once, or until crispy on both sides. Remove to a bowl and set aside.
To the same skillet, add butter and heat until melted. Add the potatoes and cook until crispy and almost fork tender, about 10 mins.
Reduce the heat to medium, and add the onions and garlic. Cook for 5 minutes. Stir often to prevent burning until the onions have softened.
Add the bell peppers to the skillet and cook for another 10 minutes
Add the sausage back to the skillet along with the eggs. Stir to combine.
Cook for another 3-4 minutes, or until the eggs are cooked through. (The eggs may take on a slightly grey color from the sear on the sausage, that's okay.) Season with salt and pepper to taste. Serve immediately.
