Ingredients You’ll Need to Make Baileys Irish Cream Cheesecake
CRUST
PANTRY ITEMS: To make the crust for this cheesecake you will need Oreo cookie crumbs, powdered sugar, and unsweetened cocoa powder.
REFRIGERATED ITEM: You will also need unsalted butter.
CHEESECAKE
REFRIGERATED ITEMS: Set out a few bricks of cream cheese to soften, along with eggs and sour cream to come to room temperature. Letting these items warm up will make mixing these items easier.
PANTRY ITEMS: You will also need granulated sugar, unsweetened cocoa powder, and all-purpose flour to make the cheesecake layer.
LIQUOR: Irish cream liqueur is a must-have for this dessert so pick up a brand like Baileys or Ryan’s.
IRISH CREAM WHIPPED CREAM
WHIPPED CREAM: To make the whipped cream you will need heavy whipping cream, granulated sugar, and Irish cream liqueur.
GARNISH: Top your finished cheesecake with Oreo crumbs and fresh sliced strawberries.
How to Make Baileys Cheesecake
Jump to RecipeSTEP 1 Preheat the oven to 350 degrees F and set out a 9-inch springform pan to use for this cheesecake. In a medium bowl, mix the Oreo cookie crumbs, powdered sugar, and cocoa powder. Stir in the melted butter and once everything is well mixed.
STEP 2 Press the crust mixture into the pan and bake for 10 minutes. Allow the crust to cool as you move on to the cheesecake.
STEP 3 Using a stand mixer or a large bowl with beaters, combine the cream cheese, granulated sugar, cocoa powder, and flour, and beat until blended. Add the eggs one at a time, beating the mix after each egg. Turn the beaters or mixer to low and mix in the sour cream and Irish cream until just combined.
STEP 4 Pour the cream cheese filling over the crust and bake the cheesecake for 60-75 minutes, or until the center is almost set. Once out of the oven, loosen the cake edges from the pan using a knife, and then remove the rim of the pan. Chill the cheesecake in the fridge for 6 hours or overnight.
STEP 5 Beat the heavy whipping cream and sugar in a large mixing bowl on high until stiff peaks have formed Add the Irish cream and beat until just combined.
STEP 6 To serve the Irish cream chocolate cheesecake, remove the cake from the fridge. Spread the Irish cream whipped cream all over the top of the cheesecake. Then sprinkle Oreo cookie crumbs over the whipped cream and place a sliced whole strawberry in the center.
Tips & Tricks
- Creating Oreo cookie crumbs is super easy and can be done in one of two ways. The easiest way to make cookie crumbs is to toss the cookies into a food processor and blend until you get crumbs. The second way to make cookie crumbs is to place the cookies in a ziplock bag and lightly beat the cookies with a rolling pin or other heavy utensil until you have crumbs.
- To make a really flavorful cheesecake, regular cream cheese is highly recommended for this recipe. Cream cheese is the star of the show in this recipe so let it shine!
- Be sure to set out your cream cheese, sour cream, and eggs to soften or come to room temperature. This always makes mixing easier and the less time you spend stirring, the creamier and fluffier your baked goods will turn out.
- Store the cheesecake covered in the fridge for up to 5 days or wrap the cheesecake in plastic wrap, without the whipped cream topping, and freeze for up to 5 months. Allow the frozen cheesecake to thaw in the fridge overnight before enjoying.

Is Irish cream and Baileys the same thing?
Irish cream is traditionally made with Irish whiskey and rich Irish cream with a little sugar. As a side note, the addition of sugar is what classifies Irish cream as a liqueur and not a liquor, as liquor is not sweetened and has a much higher alcohol content.
Baileys falls under the category of Irish cream, as it does include those ingredients, but also contains cocoa and hints of vanilla flavor. There are also other Irish creams on the market that include flavors like strawberry, espresso, and marshmallow.
Should you keep Baileys in the fridge after opening?
Baileys does not need to be refrigerated after opening but if you decide not to keep it in the fridge it must be kept somewhere cool and out of direct sunlight. An open bottle of Baileys will last for up to 2 years if kept in a good spot.
If you live somewhere warm you might consider keeping it in the fridge so that it lasts as long as possible, as temps over 77 degrees F will cause your Baileys to spoil more quickly.

Oreo Crust
- 1 ½ cups Oreo cookie crumbs (about 17 cookies)

- â…“ cup unsweetened cocoa powder
- ¼ cup unsalted butter melted

- 24 ounces cream cheese softened (3 packages)
- 1 ¼ cups granulated sugar
- ¼ cup unsweetened cocoa powder
- 3 tablespoons all-purpose flour
- 3 large eggs at room temperature
- ½ cup sour cream at room temperature
- ¼ cup Baileys Irish Cream
Irish Cream Whipped Cream
- 2 cups heavy whipping cream
- â…” cup granulated sugar
- 2 tablespoons Baileys Irish Cream
Garnish
- 8 Oreo cookies crushed into crumbs
- 1 strawberry sliced
Instructions
Crust
- Preheat your oven to 350 degrees F.
- In a medium mixing bowl, mix together the Oreo crumbs, powdered sugar, and cocoa powder. Add the melted butter and stir until evenly combined.
- Pat the crust mixture into the bottom of a 9-inch springform pan to cover the bottom of the pan. Bake for 10 minutes. Remove from oven and set aside.
- In a large mixing bowl, beat the cream cheese, sugar, cocoa powder, and flour on medium speed until combined and smooth.
- Add the eggs one at a time, mixing well after each addition. Mix in the sour cream and Baileys on low speed just until combined. Pour the cheesecake filling over the baked crust.
- Bake for 60-75 minutes or until the center is almost set.
- Remove from the oven. Take a sharp knife and carefully run it around the edge of the pan to loosen the cake from the sides of the pan. Let the cheesecake cool to room temperature and then remove the rim of the springform pan.
- Chill in the fridge for at least 6 hours to overnight.
Irish Cream Whipped Cream
- Beat the heavy whipping cream and sugar in a large mixing bowl with a hand mixer on HIGH speed until stiff peaks form. Mix in Baileys just until combined.
To Serve
- Spread the Irish Cream Whipped Cream all over the top of the cheesecake. Sprinkle Oreo crumbs over the whipped cream and then place a sliced whole strawberry in the center of the cheesecake.
