Brie-and-Sausage Breakfast Casserole

Brie-and-Sausage Breakfast Casserole is a savory morning bite that'll leave you feeling full and happy!


  • 4 ounces breakfast sausage
  • 6 eggs
  • 1 to 1 1/4 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon Italian seasoning blend
  • 1/4 cup fresh parsley, finely chopped
  • 5 cups 2 day old French bread (about 1/2 loaf), cut into 1/2-inch pieces
  • 4 ounces brie (I used a double cream)


  1. Preheat your oven to 350 degrees F. Lightly coat a 9-inch by 9-inch baking dish with non-stick cooking spray.
  2. Place a skillet over medium-high heat. Add the sausage to the hot pan and cook until no longer pink, about 10 minutes. Be sure to break up the sausage into small pieces as it cooks. Remove the sausage to a paper towel lined plate to drain.
  3. Ina small mixing bowl, whisk together the milk and eggs. Add the salt, onion powder, Italian seasoning, and fresh parsley to the egg mixture and whisk to combine.
  4. Place the bread in a large mixing bowl and pour the egg mixture over the top. Stir to coat the bread pieces in the liquid and seasonings.
  5. Add the sausage and almost all of the brie to the bread. Stir carefully to combine.
  6. Transfer the casserole mixture to your prepared baking dish, and spread it into an even layer. Dot the top of the casserole with the reserved pieces of brie.
  7. Bake for 30 minutes, or until the casserole is set and golden. Remove from the oven and let rest for 5 minutes. Serve warm.
